Abstract: Obesity is widely recognized as a global epidemic, primarily driven by an imbalance between energy expenditure and caloric intake associated with a sedentary lifestyle. Diets high in carbohydrates and saturated fats, particularly palmitic acid, are potent inducers of chronic low-grade inflammation, largely due to disruptions in glucose metabolism and the onset of insulin resistance (Qiu et al., 2022). While many organs are affected, the brain, specifically the hypothalamus, is among the first to exhibit inflammation in response to an unhealthy diet, suggesting that obesity may, in fact, be a brain-centered disease with neuroinflammation as a central factor (Thaler et al., 2012).
